Critical Mapping for Sustainable Food Design: Food Security, Equity, and Justice (Routledge Studies in Food, Society and the Environment)

by Audrey G. Bennett Jennifer A. Vokoun

This book introduces critical mapping as a problematizing, reflective approach for analyzing systemic societal problems like food, scoping out existing solutions, and finding opportunities for sustainable design intervention. This book puts forth a framework entitled "wicked solutions" that can be applied to determine issues that designers should address to make real differences in the world and yield sustainable change. The book assesses the current role of design in attaining food security in a sustainable, equitable, and just manner. Accomplishing this goal is not simple; if it was, it would not be called a wicked problem. But this book shows how a particular repertoire of design tools can be deployed to find solutions and strategize the development of novel outcomes within a complex and interconnected terrain. To address the wicked problem of food insecurity, inequity, and injustice, this book highlights 73 peer-reviewed design outcomes that epitomize sustainable food design. This includes local and regional sustainable design outcomes funded or supported by public or private institutions and local and widespread design outcomes created by citizens. In doing so, this book sets the stage for an evidence-driven and evidence-informed design future that facilitates the designers’ visualization of wicked solutions to complex social problems, such as food insecurity. Drawing on an array of case studies from across the world, from urban rooftop farms and community cookers to mobile apps and food design cards, this book provides vitally important information about existing sustainable food design outcomes in a way that is organized, accessible, and informative. This book will be of great interest to academics and professionals working in the field of design and sustainable food systems. Students interested in learning about food and sustainability from across design studies, food studies, innovation and entrepreneurship, urban studies, and global development will also find this book of great use.

Yet, between work, chores, family obligations, and a badly needed opportunity to unwind, you find it difficult to get dinner on the table within the time limits that life imposes on you. But cooking a great tasting meal isn’t nearly as time-consuming as it’s made out to be, and you don’t have to be a chef to pull it off. If you forgot how enjoyable a home-cooked meal can be, 30-Minute Meals For Dummies is your best resource. If you can identify with any of these descriptions, this book is for you: Between your frantic day and the demands of your personal life, you’re looking for ways to free up a few minutes. Cooking is one of the activities that gets shortchanged. You often get everything a meal has to offer in one dish – well, besides adding a scoop of ice cream to the top of your jambalaya for dessert. This book is structured around the equipment, ingredients, and recipe choices that fit your time frame. Each page is packed with my kitchen-tested suggestions for streamlining cooking. Even if you’re an experienced cook, you can pick up useful hints. You get great recipes for classic meals, new dishes, and so much more in these chapters. You’ll be pleased to know that you can fix nourishing and memorable dinners within your time frame. So ladies and gentleman, start your ovens!

A Cultural History of Food in the Modern Age (The Cultural Histories Series)

by Amy Bentley

In the modern age (1920–2000), vast technological innovation spurred greater concentration, standardization, and globalization of the food supply. As advances in agricultural production in the post-World War II era propelled population growth, a significant portion of the population gained access to cheap, industrially produced food while significant numbers remained mired in hunger and malnutrition. Further, as globalization allowed unprecedented access to foods from all parts of the globe, it also hastened environmental degradation, contributed to poor health, and remained a key element in global politics, economics and culture.A Cultural History of Food in the Modern Age presents an overview of the period with essays on food production, food systems, food security, safety and crises, food and politics, eating out, professional cooking, kitchens and service work, family and domesticity, body and soul, representations of food, and developments in food production and consumption globally.

Open Range: Steaks, Chops, and More from Big Sky Country

by Jay Bentley Patrick Dillon

Not just a major vacation destination, Montana is a veritable melting pot of delicious grub. Add to it the wide-open spaces, outdoor living, and the riches of nature, and it's enough to make any vacationer question the decision to go home! Prepare yourself for what the authors call "great, honest, and authentically hearty chow you can prepare at home,” the Montana way. Open Range serves up generous portions of meat-including venison, quail, duck, elk, fish, pork, and beef-in near-excess, and all manner of favorite local steakhouse sides. The Mint Bar and Café in Belgrade, Montana inspired the book, but the recipes include much more than menu offerings. Far from dusty chuckwagon cuisine, Montana's culinary influences are Cajun, Creole, French, and Italian. Standouts include Fried Meat Pies, Campfire Coffee Chili, Buttermilk-Fried Quail with Steen's Syrup, Poacher's Deer Leg, and more. The authors put their considerable knowledge of meat-eating to use: beginning with how the animal was raised through all the steps of choosing, prepping, marinating, cooking, and enjoying it. Follow the main course with basic potatoes and creamed spinach to stews, salsas, greens, and desserts: you'll leave the table satisfied.

Tackling the Obesity Crisis: Beyond Failed Approaches to Lasting Solutions

by David Benton

The obesity epidemic reflects a failure to understand how meals are chosen. Government initiatives have failed, and most people are unable to control their weight. In this book, an internationally recognized expert on diet and behaviour, discusses the common misunderstandings that have created the epidemic, and suggests how obesity could be reduced. After dieting the body needs fewer calories and you are likely to put on weight. Many people do not understand how to control their weight and rely on ideas that are simply wrong. Natural foods are seen as healthier when they are not. Ultra-processed foods are seen as a problem when the method of production is unimportant. There is little evidence that removing sugar from the diet, banning advertising to children, adding calories to menus, or providing nutritional information on packaging reduces obesity. In fact, removing fat from the diethas increased obesity. One conclusion is that current approaches have no chance of preventing obesity. Without new ways of dealing with obesity, it will inevitably increase, reducing life expectancy after decades of disease. So, what needs to change? One root cause of obesity is poverty. The way infants are fed in the first years of life determines the likelihood of obesity in adulthood. Without the development of low-calorie foods, little can be done. Since health policy depends on individuals changing their behaviour, they need to understand how to control their weight. Ambitious in scope, the author deals with the topic in an eye-catching and easy to understand manner, illustrated with colourful analogies and unusual and amusing facts. A refreshing novel perspective is offered that will be of interest to everyone wishing to control their body weight.
