Prevention of the Biological Contamination of Food: Processing/Distribution and Consumer Usage

by Thierry Bénézech Christine Faille

This book deals with risk management by focusing on microbiological risks. Throughout the food chain, foodstuff may be exposed to dangerous agents that can potentially affect its quality and thus the health of consumers. A good knowledge of the strategies and means of control implemented along the food chain after the primary production stage is a necessary condition and a prerequisite for any further improvement, but it is not sufficient. Indeed, in order to better prevent and therefore control these risks, it is essential to study both the phenomena of surface contamination and those relating to the elimination of this contamination by cleaning and disinfection operations in order to know the main mechanisms. Thanks to this, a certain number of innovations can already be proposed (new surfaces, new materials and cleaning and disinfection procedures, etc.) for future developments on an industrial or domestic scale.

Kin: Caribbean Recipes for the Modern Kitchen

by Marie Mitchell

‘A beautiful, familiar and comforting cookbook … I can’t wait to buy it for everyone I know’ Candice Carty-Williams‘An outstanding gem of a book – vibrant, exciting and full of modern twists’ Ixta BelfrageAs the daughter of Jamaican immigrants, Marie Mitchell's cooking is motivated by a powerful desire to understand and celebrate those recipes that have been passed down from generation to generation. In Kin, her hotly anticipated debut cookbook, she shares dishes from the Caribbean and its diaspora, exploring the connection food can foster between different times and different places, and between friends, families and strangers.Accompanied by gorgeous photographs, many of them shot on location in the Caribbean, the book's eighty recipes - which include crispy saltfish fritters, rich and tempting aubergine curry, slow cooked jerk pork, zingy lime and ginger cheesecake and sweet Guinness punch - confound the widespread misconceptions about Caribbean food that abound in the West, which draw on stereotypes of intense heat, pungent smoke and a handful of familiar dishes. But while chilli is certainly a key ingredient and cooking over fire has a long and storied history, Caribbean cookery is also subtle and playful, layering different notes and spices carefully to create delicate, rewarding flavours.Crackling with energy and heart, Kin is a love letter to Marie's Caribbean identity, a journey through the region's myriad food cultures and a tribute to this most resourceful, resilient and joyous of cuisines. Here, Caribbean food emerges as one of the first truly global cuisines, borne out of the violent convergence of African, American, European and South Asian cultures in the long, troubling history of empire and emancipation, its legacy preserved - and, ultimately, transformed - by the kinship of those who share food.

A Woman's Place is in the Kitchen: dispatches from behind the pass

by Sally Abé

'Fantastic, exciting deep dive into kitchen life from one of Britain's leading young chefs' TOM KERRIDGE'Sally really tells it how it is . . . This book will be a go to for those needing that bit of bravery and resilience in a world that needs more people like her' CANDICE BROWN'Wow. Sally's book is an insightful, honest account of a young cook's journey to an inspirational chef' ANGELA HARTNETTFrom the star of the Great British Menu, for readers who loved Kitchen Confidential and couldn't tear their eyes away from Boiling Point, a book that reveals the reality of working in restaurant kitchens - and how they need to change for the betterIt's a familiar trope: angry men berating each other in kitchens as pots furiously boil, sauces burn and a giant slab of beef rests in the background. The dominant view of a professional kitchen is one of chaos and pent-up fury - a gladiatorial contest of male ego. Why then do we also hear the misogynistic refrain that women 'belong in the kitchen' if, in a professional context, they're all but erased from them? A Woman's Place is in the Kitchen is the story of Sally Abé's rise to become an award-winning chef in the brutal world of restaurant kitchens; how a girl from the midlands who used to cook herself Smash to get by is now one of the most successful fine-dining chefs working today. More than that, Sally's story is also a stirring manifesto - drawing back the curtain on restaurant kitchens to show how she is endeavouring to change them for the better. Filled with stories of Michelin-starred food, the relentlessness of kitchens, as well as the hope for the future of the culinary landscape, Sally's memoir is set to become a classic.

Organizing Food, Faith and Freedom: Imagining Alternatives (Organizations and Activism)

by Ozan Nadir Alakavuklar

Consumerism, unsustainable growth, waste and inequalities continue to ail societies across the globe, but creative collectives have been tackling these issues at a grassroots level. Based on an autoethnographic study about a free food store in Aotearoa New Zealand, this book presents a first-hand account of how a community is organized around surplus food to deal with food poverty, while also helping the reader to see through the complexity that brings the free food store to life. Examining how alternative economies and relations emerge from these community solutions, the author shows it is possible to think, act and organize differently within and beyond capitalist dynamics.
